Ingredients:⁠

  • 4 courgettes⁠
  • 100g vegan parmesan (or any plant-based cheese you prefer!)⁠
  • Salt and pepper to taste⁠

    Method:⁠
  • Step 1: Heat your oven to 220 Fan ⁠
  • Step 2: Thinly slice the courgettes and place on a lightly salted baking sheet ⁠
  • Step 3: Sprinkle with cheese⁠
  • Step 4: Bake for 20 mins

    Instructions
  • Step 1: Combine peanut butter, flax, oats, and maple syrup in a medium - mixing bowl (the mixture will be quite dry)⁠
  • Step 2: Stir in the chocolate chips⁠
  • Step 3: Use a tablespoons worth of mixture to roll into a bowl⁠

  • 2 cans of chickpeas ⁠

  • 1 tbsp olive oil ⁠⁠
  • Parsley to garnish⁠⁠

  • Step 1: Heat your oven to 220 fan⁠⁠
  • Step 2: Drain the chickpeas⁠⁠
    • Step 3 combine chickpeas, spices and oil in a bowl and mix well⁠⁠
  • Step 3: Bake until crunchy (about 25 min)⁠⁠
  • Step 4: Sprinkle parsley⁠⁠

Ingredients

  • 1 tin of black beans
  • 1 tbsp of chipotle paste
  • 50ml of water
  • 50g baby plum tomatoes (halved)
  • 50g Vegan cheese
  • 1 avocado (mashed)
  • Red and green chilli
  • 1 spring onion (Sliced)
  • 1 lime (Cut into wedges)
    80g Coconut yoghurt

    __Method__
  • Step 1: Heat the oven to 210 degrees
  • Step 2: Drain and lightly mash the black beans
  • Step 3: Heat a medium frying pan on medium-high heat with a drizzle of oil. Add the mashed beans, chipotle paste and 50ml water
  • Step 4: Stir to combine and simmer for 3-4 mins.
  • Step 5: Spread the tortilla chips over a baking tray. Next, spread spoonfuls of the beans on top, then sprinkle with the vegan cream
  • Step 6: Bake in the oven for 10-12 mins, until golden
  • Step 7: Sprinkle with the tomatoes, chilli and spring onions. Dollop with the mashed avocado and coconut yoghurt. Squeeze over a lime wedge and enjoy
